Meringue ghosts recipe

These sweet and scary ghost meringues will keep little ones entertained this Halloween.

Ingredients

Six egg whites

300g of Siúcra granulated sugar

Pinch of salt

Melted chocolate or icing

  • Whisk the egg whites with an electric beater at medium speed, until they form stiff peaks.
  • Add the salt and sugar, and continue whisking at the highest speed until the mixture is shiny.
  • Put in a piping bag and pipe out the mixture in the shape of ghosts or bones.
  • Bake at the centre of the oven at 125°C, for just over one hour.
  • Place on a wire rack.
  • Make eyes for the ghosts with melted chocolate or icing.

    National Organic Awards winners

    Five Irish food and drink companies won accolades at Bord Bia National Organic Awards.

    Brewmaster Laura Murphy won the top award for Ireland’s first kombucha brewery, SynerChi in Gweedore, Co Donegal.

    She claimed both the Innovation and the Best Processed Product awards for her SynerChi Live Kombucha Original Sencha Tea.

    Other award winners were Monaghan-based Mulberry Meadow Farm that won the Best Fresh Product award for its organic living micro broccoli, and Galway’s Beechlawn Organic Farm that won the Best New Product Award for its organic sun gold orange cherry tomatoes.

    Waterford-based The Little Milk Company won the Export Award for its organic mature cheddar and Galway-based Green Earth Organics won the Direct Selling Award for its large vegetable box.

    An online resource designed to educate early school leavers in healthy eating and food safety was launched by Safefood.
