I’d drive… the beach in Duncannon, Co Wexford, and take in the sea air, after breakfast in Fennelly’s in Callan.

I’d visit… Hook Head, have coffee, climb to the top of the lighthouse and view the great roaring of sea.

I’d treat myself to… dinner at Aldridge Lodge outside Duncannon, Co Wexford, where the lovely Billy and Joanne run the most superb restaurant. I would have booked in advance because they fill up so fast. For an overnight stay, I’d go to Marsh Mere Lodge in Arthurstown, Co Wexford, where the lovely Vincent would bring me for a drive in his trap in the morning. The room I would stay in is called “Margaret In Disguise”.

White Gables Restaurant, Moycullen, Co Galway

I’d drive… after a coffee and warm pastry from Elizabeth at O’Sullivan’s in Oughterard, I’d drive through Maam Valley and into Leenane to enjoy the spectacular views while dodging the sheep and spending time overlooking Killary Harbour.

I’d visit… the walled gardens at Kylemore – such a wonderful recreation of former days. Or make my way to Omey Island and enjoy the tranquillity of this wonderful place. It’s a perfect spot for a picnic lunch; keeping an eye on the tide in case we forget to come back! I’d be sure to pack our wonderful sourdough bread and chicken liver pate, along with a mixed leaves salad from Dela farm.

I’d treat myself to... A night in The Abbeyglen in Clifden for true Irish hospitality. I’d order oysters followed by grilled lobster, with perhaps a glass of bubbles or three.

I’d drive… to the beach! We are so lucky that the farm is only a stone’s throw from the Giant’s Causeway, White Park Bay and Ballintoy Harbour. White Park Bay in particular is utter bliss. I’d then make a trip out to Babushka cafe in Portrush to get a really great cup of coffee.

I’d visit… the Carrick-A- Rede rope bridge is so breath-taking. It’s a great way of seeing the stunning coastline and the rope bridge is great fun to cross!

I’d treat myself to... dinner at Ocho Tapas in Portrush is one of my favourite places to eat out. The albondigas are probably my favourite dish. Or a night at The Salthouse hotel and spa in Ballycastle. It has good food but most importantly a spa, which after a long season on the farm is a well-needed treat!

I’d drive… to Clogher Beach. Just to stand and watch the waves and to listen to the crash as they hit the rocks and the shore really mesmerises me. A picnic basket from the Little Cheese shop would be the ultimate treat. Mark Murphy, the owner, selects the most fabulous artisan Irish cheese, and Bacus Bread from right beside him in Dingle. It’s so good we have included it in our packages to our guests.

I’d visit… The Blasket Centre, or Cashel Murphy, the ringfort located just past Ventry. Quinn’s Pub in Ventry on a nice day, sitting outside with a coffee and watching the world go by, is just heaven

I’d treat myself to… We are totally spoiled for choice for food in Dingle, so I can’t pick just one place! My husband Brian and I love fish, though, and it really doesn’t get any fresher than in Dingle. And for dessert, I recommend Murphy’s Ice Cream. Raspberry sorbet for the kids and sea salt for me.
