Snickerdoodles are a type of sugar cookie that is rolled into a ball and then rolled in cinnamon and sugar before being baked. The sugar and cinnamon on the outside get nice and crunchy and add a lovely flavour to the otherwise plain cookie.

Snickerdoodles
Snickerdoodles.
Ingredients:
250g soft butter
375g granulated sugar
2 eggs
2 tsp vanilla
350g plain flour
1 1/2 tsp cream of tartar
1/2 tsp bicarbonate of soda
1 tsp salt
For the cinnamon sugar:
90g granulated sugar
1 1/2 Tbsp cinnamon
Directions:
1 Cream the butter and sugar together until light and fluffy.
2 Add the eggs and vanilla and beat until well combined (about two minutes with a hand or stand mixer).
3 Add the flour, cream of tartar, baking soda and salt and mix well to combine.
4 Line a baking sheet with parchment paper and preheat your oven to 180C. Mix the cinnamon and sugar together.
5 Roll the cookie dough into balls and roll them in the cinnamon sugar.
6 Place them on the baking sheet and bake for about 10 minutes, until light brown.
7 Let them cool, then enjoy!
