Paladar’s ethos brings top cocktail honours

Paladar in Cork has been announced as a 2023 Spirited Awards Regional Top 10 Honoree for Best New Cocktail Bar for Europe. Paladar is a Latin American-inspired cocktail bar and kitchen with a rotating menu of classic and signature cocktails based around rum, cachaça, agave and pisco. Paladar’s bar manager, Oisín Wolfe, who is a finalist in this year’s Diageo Reserve World Class Bartender of the Year, curates the cocktail menu. Sustainability is high on the bar’s list of priorities. From reusing tequila bottles for water bottles to using all of their coffee grounds to make coffee liqueur, they take the issues of plastic and food waste seriously and take as circular an approach to their menu as possible.

Ballymaloe Relish’s long history with sustainability

Ballymaloe Relish can be traced back to the 1930s, when Ivan Allen was growing tomatoes in his glasshouses in Shanagarry, Co Cork. Ivan’s wife Myrtle began to create a relish, naturally preserving the tomatoes so they could be enjoyed all year round.

Since 2018, Ballymaloe Foods has cut plastic packaging by 22%, electricity usage by 28% and their overall waste output by 19%.

Using her mother’s recipe, Yasmin Hyde, Myrtle’s daughter, began producing Ballymaloe Relish in her own kitchen and established Ballymaloe Foods in 1990. Since 2018, the company has cut plastic packaging by 22%, electricity usage by 28% and their overall waste output by 19%. An active member of the All-Ireland Pollinator Plan, Ballymaloe Foods also works with Food Cloud to re-distribute surplus food to community groups. In 2022 alone, Ballymaloe Foods donated approximately 3,333 meals through this initiative.

Kate Ryan wins big for championing Irish food

Kate Ryan, award-winning food writer and founder of Flavour.ie, has been named Blas na hÉireann’s Producers’ Champion for 2023. The Producers’ Champion is selected annually by Blas na hÉireann producers, based on a survey that goes out to the entire Blas network – a network that covers every county in Ireland with producers from across the food industry. Kate’s platform is dedicated to promoting Irish food and drink and also features her blog, The Flavour Files, where she writes about great local produce, seasonality, wild and foraged food, and craft drinks of all kinds.

Two Green Shoots launch ‘Garden of Re-imagination’

Dead Centre Brewing launches new all-natural lemonade

Athlone’s Dead Centre Brewing are making waves with the launch of their sister soft drinks operation, The Irish Craft Soda Co.

The innovative new venture’s flavoursome first release is a small-batch handmade lemonade – among the first of its kind to be produced in Ireland.

Crafted from just four all-natural components (carbonated water, pure lemon juice, sugar, and citric acid) The Irish Craft Soda Co’s select list of ingredients may be small, but the lemonade delivers big on flavour and is completely free from sulphites, preservatives, and flavour or colour enhancers.

Three other year-round soda flavours are set to be unveiled in the coming months.
