Turkey orders
Christmas orders are now open for the Friendly Farmer’s famed pasture-reared poultry.
The Friendly Farmer, AKA Ronan Byrne, rears geese and bronze turkeys slowly (for at least 24-month) and in small flocks. All the birds are raised on the farm from day one up until they are packaged for delivery. Orders are available for collection in Athenry and Galway city, and collection or home delivery in Dublin.
The bronze turkey costs €4.65/lb and goose is €5.95/lb. Weight range is approximately 12-18lbs.

Carton House recipe
How about some crispy fried goat’s cheese with rhubarb chutney and orange-scented baby spinach salad? This dish is bound to impress during the party season. Cathal Kavanagh, executive chef at Carton House resort in Kildare, has supplied the recipe.
Serves four
200g of goat’s cheese
Flour for dusting
1 egg, beaten
100g of Panko breadcrumbs
For the chutney:
2 onions, sliced
1 knob of ginger, chopped
45ml of olive oil
1kg of rhubarb
200ml of red wine vinegar
500g of light brown sugar
For the salad:
150g of baby spinach
50g of basil
50g of flat-leaf parsley
2 tsp of spring onions, sliced
½ red onion, thinly sliced
100ml of honey, mustard & ginger dressing
Vegetable oil, for frying
