Instagram Inspiration

The Six Nations is giving us life these days; bringing a little normality to these cold February weekends. We got a proper laugh on Instagram last weekend when @amy_huberman gave us a behind the scenes shot of her husband @brianodriscoll commentating from home.

Just like the rest of us, even BOD is embracing the work from home uniform of shirt on top, slippers on bottom. He pulled it off on the big screen though, go on BOD!

Letter to the Editor

Dear Amii,

As a weekly Irish Country Living (ICL) reader, I just thought I’d send you this email.

I’m in my 50s, did a really poor Leaving Cert (LC) back in the day and basically in September 2019 decided to attempt my LC English again. I had a brilliant teacher helping me along the way, lots of hard work, and got my result last Tuesday which I could not believe. I have never written an article before but I just want to say to ICL readers to not be afraid if they have something they always wanted to do. It is possible if we have the willpower and faith. I just wrote about my year, to have it for myself as it was such an important event for me.

I suppose, I just thought my whole life has been and will always be based on ‘country living’ and yet I and so many more may have capabilities which we do not give ourselves credit for.

Thank you for your weekly editorial and the ICL magazine, I look forward to it each Thursday.

Sincerely,

Róisín Rice,

Kerry.

You have a busy day with several jobs on the go together. All is going to plan until the smell of a burnt stew reaches your nostrils. There’s no need to panic: first, save the dinner by emptying off the still-tasty liquid. Do not scrape the bottom, because you will taint the stew. Give the saucepan with its caked mess a rinse out. Scrape off what you can easily. Put about 3cm of water into the pot, add a dishwasher tablet and boil for a few minutes. Gradually, the burnt food will loosen and the saucepan can be easily washed. You might need to do it a second time but it’s certainly better than throwing out the saucepan.

From Rachel Dermody, My Country Living:

I was on a Fendt 720, for the contractor. He always puts me back on it when I fill in. He knows I love it. I got to bring it home one evening, we were doing some lad’s silage near where I live. Seeing it parked outside the front door, it looked great. The plan is to save up for one
