Look out for one of the baddies – winter heliotrope with distinctive kidney shaped leaves, which are downy on the underside. It grows in shady places along roadsides where ground has been disturbed or existing vegetation sprayed. It creeps along by rhizomes or underground stems carpeting large areas of ground with its dense canopy of leaves suppressing other vegetation. Winter heliotrope, a native plant in the Mediterranean, was introduced to Ireland in the early nineteenth century and is now an invasive alien species, having escaped from gardens. As with all invasive alien species, the problem is that winter heliotrope crowds out our native Irish biodiversity.

Chef’s Tip

Brewing the perfect cup of coffee means different things for different people. Some like a strong, robust brew, while others are turned off by a cup which tastes too bitter or acidic.

Depending on your brewing method, you may require a fine or a coarser grind of bean. For example, if you’re brewing espresso, you want a fine (almost powder fine) grind, while if you’re using a French press, a coarser grind is preferable. There are many independent coffee roasteries in Ireland with experts who can help you find your ideal method. I am old-fashioned, and prefer drip machine coffee. I buy whole beans and grind them myself.

A few general tips:

Use really cold, filtered (if possible) water.

Use filters - even if your machine comes with a reusable filter (this will keep any sediment at bay).

Keep your whole beans at room temperature, not in the fridge or freezer. And - if you’re feeling fancy - some say that adding a sprinkling of sea salt on top of your ground beans will enhance the overall drinking experience.
