Four-year-old Ciara Kennedy lives in Tipperary. She loves dinosaurs, playschool, her friends and pancakes.

In episode 16 of Kids in the Kitchen, Ciara shows us how to make her mom's fluffy buttermilk pancakes (with a little help from her big sister). Her parents like their pancakes with wild blueberries, maple syrup and butter, but Ciara and her sisters Maeve and Aine prefer theirs with a bit of chocolate spread (palm oil-free) and fresh, sweet Irish strawberries.

Ciara's buttermilk pancakes

Ingredients

250g self-raising flour

1 tsp baking powder

1/2 tsp salt

60g caster sugar

2 large eggs

1 tsp good quality vanilla

400ml buttermilk

60g butter, melted

Directions

  • 1 In a large bowl, combine the flour, baking powder, salt and sugar. Make a well in the centre of the dry ingredients.
  • 2 Add the eggs, vanilla and buttermilk to the well and mix to quickly incorporate all of the ingredients (you don't want to overmix and some lumps in the mixture are fine). You can also do this in a food processor or blender.
  • 3 Add the melted butter and gently fold into the mix.
  • 4 Heat a non-stick pan on medium-low heat. Drop the batter into the pan in approximately 60g spoonfuls. When the bubbles appear all over the top of the pancakes, they are ready to flip.
  • 5 Cook the pancakes until golden brown on both sides. Keep warm until ready to serve.
  • 6 Serve with fresh fruit, maple syrup, chocolate spread and butter. Enjoy!
