Ballynahinch Castle welcomes new head chef Ultan Cooke
Michelin-star chef Ultan Cooke, formally head chef at Aniar in Galway, has started his role as head chef at Ballynahinch Castle Hotel, taking over from long-term head chef Xin-Sun.
Nestled in the region of west Galway, Ballynahinch Castle aims to reflect its surroundings in its menu in both the main restaurant, The Owenmore, and the bar, The Fisherman’s Pub, serving the most authentic ingredients.
“I really respect the ethos of Ballynahinch Castle Hotel,” says newly appointed chef Ultan Cooke. “And I am looking forward to expressing all that is good about the larder of Connemara in a way that fits with the fine tradition of this well-loved hotel.”
The ethos that has always guided Ballynahinch will remain the same under its new chef – using the finest ingredients Connemara can offer – but the delivery will differ in many creative ways now that there is a new imaginative force in the kitchen.
