Lucy's coffee cupcakes
Ingredients
For the cupcakes:
140g softened butter
50ml milk
140g caster sugar
2 large eggs
200g self-raising flour
1 tsp baking powder
1 tsp vanilla
1 Tbsp instant coffee powder
For the coffee buttercream:
225g icing sugar
170g softened butter
1 tsp instant coffee powder
1-2 tsp water, if needed
Directions
1. Preheat your oven to 180C and line a muffin tin with muffin liners.
2. Make the cupcakes: in a large bowl, combine the dry ingredients. Mix well and make a well in the centre.
3. Add the butter, milk, eggs and vanilla. Mix until just combined.
4. Divide the batter into the muffin tin and bake for 15 to 20 minutes in the preheated oven.
5. While the cupcakes are baking, make the buttercream: combine the icing sugar, butter and coffee powder in a large bowl and mix well, until light and fluffy. If the icing is too stiff, loosen it up with some water.
6. Let the cupcakes cool; then top them with the coffee buttercream. Enjoy!
