Lucy's coffee cupcakes

Ingredients

For the cupcakes:

140g softened butter

50ml milk

140g caster sugar

2 large eggs

200g self-raising flour

1 tsp baking powder

1 tsp vanilla

1 Tbsp instant coffee powder

For the coffee buttercream:

225g icing sugar

170g softened butter

1 tsp instant coffee powder

1-2 tsp water, if needed

Directions

  • 1. Preheat your oven to 180C and line a muffin tin with muffin liners.
  • 2. Make the cupcakes: in a large bowl, combine the dry ingredients. Mix well and make a well in the centre.
  • 3. Add the butter, milk, eggs and vanilla. Mix until just combined.
  • 4. Divide the batter into the muffin tin and bake for 15 to 20 minutes in the preheated oven.
  • 5. While the cupcakes are baking, make the buttercream: combine the icing sugar, butter and coffee powder in a large bowl and mix well, until light and fluffy. If the icing is too stiff, loosen it up with some water.
  • 6. Let the cupcakes cool; then top them with the coffee buttercream. Enjoy!
