Recipe

Perfect fudgy brownies.

Maeve's Brownies

340g butter, melted

375g granulated sugar

2 tsp vanilla

4 large eggs

1 tsp salt

90g cocoa powder

1/2 tsp bakling powder

128g plain flour

For the chocolate frosting:

250g icing sugar

2 tsp vanilla

90g butter, softened

60ml milk

1 good pinch of sea salt (or table salt)

sprinkles (optional)

  • 1 Preheat the oven to 190°C. Line a rectangular tray with parchment paper and set aside.
  • 2 In the bowl of a stand mixer, add the melted butter to the sugar. Beat until well-combined.
  • 3 Add the vanilla and eggs. Mix until the mixture is light and fluffy (about two minutes).
  • 4 Add the salt, cocoa, baking powder and flour. Mix until just combined.
  • 5 Spread the batter evening onto the tray and bake for 20-25 minutes until just baked.
  • 6 Make the frosting: add the icing sugar, vanilla and butter to the stand mixer bowl. Mix until well combined. Add the salt, cocoa and milk and beat on high for about five minutes, until the mixture in light and creamy.
  • 7 When the brownies are still warm, spread the frosting over the top (it will melt a bit; this is what you want). Add the sprinkles at this stage, if you like. For “adult” brownies you can sprinkle some more flaky sea salt on top or drizzle with caramel.
  • 8 Let the brownies cool and the frosting set for at least four hours. Slice and serve.
